Cusumano winery is run by two brothers, who operate closely with their father, Francesco Cusumano, and expert winemaker, Mario Ronco. Together their artistic excellence and passion, embrace the diversity of the land in each wine, creating a bright explosion of modern, innovative, dynamic wines. Salealto traces the history of King Ferdinand IV of Bourbon and the Real Casina di Caccia of Ficuzza. In this place, in 1800, the sovereign kept his own wine, produced with grapes from vineyards located in the surroundings of our Ficuzza estate. We imagined how the wine drunk by a King could have been, and after a few years of experimentation, Salealto was born; a “vin du terroir” obtained from Insolia, Grillo and Zibibbo in equal parts, vinified separately and then refined together.
Fermentation in stainless steel tanks at 68˚F, racking and assemblage, 10 months on the fine lees followed by aging in bottle.
Manual harvest into cases, maceration in the press at ambient temperature followed by static clarification.
