Overview

Cusumano Winery is spearheaded by two brothers whose value of artistic excellence and passion for meticulous detail, have driven them to create a bright explosion of modern, innovative and dynamic wines. The two brothers run the operations closely with their father, Francesco Cusumano, and craft the wines with expert winemaker Mario Ronco. Shamaris is a territorial wine made with 100% of Grillo grapes, indigenous varietal of Sicily, from the hills of Monreale at over 1,312 ft above the sea level. Enjoy Shamaris with grilled fish, pasta, or vegetables.

Aging

Period in stainless steel containers on the fine lees for 4 months and successive fining in the bottle.

Fermentation

Cold pressing with skins for 5 hours at 57°F, pneumatic pressing, cold decanting, fermentation at 64°-68°F.
