Pinot Noir
8 months -A portion in stainless steel and a portion in oak to retain the pure intensity of the fruit.
The grapes were pumped straight to the tank without crushing in order to leave some whole berries. After a five-day cold soak, the must was warmedand fermentation was spontaneous. The ferment was hand plunged twice a day and pressed at dryness. The wine then underwent malolactic fermentation in tank and was racked off to oak and stainless-steel storage.
