This dry style of Pinot Gris is very aromatic with long, lingering notes of lime, great texture, mouth feel and delicate complexity.
Fermentation
The juice then is floated and inoculated. This is followed by cool fermentation with an aromatic yeast and stopped when balanced. The wine is then cold stabilized and bottled.
