Following fermentation, it is then aged in stainless steel.
Naturally frozen Riesling grapes are hand-harvested from Niagara-on-the-Lake vineyards at minus 10°C. The grapes are pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration.

This Riesling Icewine has an elegant, luxurious mouth-feel and flavours of baked yellow apple, pineapple and lemon custard. The great balance between acidity and sweetness provides exceptional texture on the palate. Notes of lemon drops, and orange cream linger on the finish.
